Chris was a chuckwagon cook in a former life. He tells me he's distantly related to Wishbone but can't remember exactly how. When I get the hankering for some huevos rancheros he is always willing to oblige. This morning the batch he made was perhaps his best effort yet.
Here's the basic recipe. Chris always modifies it based on what we have on hand - that's what you gotta do when you're on the trail with no trading post in site and a few dozen hungry cowboys to feed.
We had plenty left over so they are on the menu again for tomorrow morning. It's a little known fact that beans were one of George Washington's favorite foods, so it will be a fitting start to our Presidents Day.
Mexican food is one of my all time favorites since childhood. I distinctly recall having my very first taco when I was age 6...I was hooked for life. This recipe is quite different from the one I use for Huevos Rancheros, but sounds divine! I'll have to give it a taste. Thanks for making my mouth water.

There's only one western cook that Chris can possibly be - only one western cook did what Chris can do today. Yes, huevos rancheros. Cookie did those very well. Any type of meat - briskit, steak, ribs - all type of the line as I'm sure Wishbone could do. But there's only one who could do Chop Suey and stir fry - the one, the only - Hop Sing of the Ponderosa.
