I used this recipe and it turned out great. I didn't have any coconut oil so substituted vegetable oil. I will say I was pleasantly surprised when it flipped out perfectly. Mom always used to make pineapple upside down cake when we were kids. She used to put a marachino cherry in the middle of the pineapple rings. I didn't have any or I would have done that too.
I usually think about this dessert in the summer. Until I discovered that canned pineapple was made to be eaten in the winter.
