The first batch of pickled cucumbers and red onion for 2016 was made yesterday.
For me, these make the perfect side salad to go with any meal you are having in the summer.
They are also excellent on a dense 9-grain or pumpernickel bread that you have first spread with cream cheese or goat cheese. I had never heard of pickled cucumber sandwiches until I had one in Manteo, North Carolina in 1997. We sat outside by the water for lunch and the memory of that sandwich is etched permanently in my mind. A couple of kettle cooked potato chips are real good on the side. As is a nice cold bottle of beer. There was a great bookstore in Manteo, with a resident cat. I bought "The Shipping News" there. Excellent book, but I am getting off track.
These two jars should last me two weeks. Unless I find Chris getting into them in the middle of the night. Which is extremely unlikely.
