Here's my entry in the palliative care office "Energy Ball Throwdown". What set this recipe apart, was that the almonds, old fashioned oats, and coconut were toasted for 10 minutes and then cooled before I added the rest of the ingredients. If you don't generally toast nuts or oats before you use them in a recipe - this recipe will make you change your mind.
Peanut butter, honey, cranberries, and a few tablespoons of a flax and chia seed combination round out the ingredient list.
Stir it all together and be ready to get your hands really dirty as you scoop and roll.
I made a recipe and a half. Don't ask me why I didn't just double it. That would have been way too easy. Here is a link to the recipe.
I got 21 balls. Just the perfect amount for an office of 7 restrained individuals with a few left over for visitors. I will make these again. They also made me hungry for no bake cookies. Which I am NOT going to make this weekend. Even though they would be perfect because it's so hot and I wouldn't have to turn the oven on.
