Looks yummy! And right-on with the stems. They are full of nutrients. If you're growing the broccoli, you can use the leaves too. Want a great side? Use the florets to cook up in some cornbread, to go with the soup.

Here is Janelle's tried and true recipe.
Broccoli Soup

1 cup chopped onion
1 cup chopped celery
2 1/2 cups chopped potatoes
20 oz frozen broccoli or 2 bunches fresh
4 cubes chicken Bouillon
1 qt water
1 lb Velveeta cheese
2 cans cream of chicken soup

1. Cook all but soup and cheese til done (tender...about 20-30 minutes). Add soup and cheese. When cheese is melted (10-15 minutes), soup is done.


i use the recipie from skinnytaste.com at this link http://www.skinnytaste.com/2010/12/broccoli-cheese-and-potato-soup.html it is reaaaaaally good. sort of tastes like panera's.

there are a lot of great recipies at this site. every one i have tried has been good.


In a pinch, the 2 Tub Broccoli Cheese soup in Costco's frozen section is delish!
