No, this is not a full time cooking blog. But my heart is telling me to cook right now. Plus my old trusty hand mixer has heard the talk of a fancy, red, Kitchen Aid moving into it's kitchen. It is feeling under-appreciated. In order to reassure old trusty that it would still be used I had to get it out and make something with it. Actually not just something. I would not classify this as "just something".
These are more in line with "other-worldly". The shortbread bottom is perfectly buttery crisp. But not so crisp that it just disintegrated when bitten into and no raw dough taste in the middle. The creamy, cool filling with the buttery crust = Christmas baked goods love.
The link to the recipe is above. If you have an old hand mixer feeling left out this holiday season maybe you ought to get it out and make a batch. The only change I made to this recipe was I added vanilla to the filling. AND I didn't really know what "soft mint candies" were so I used some candy canes and some pink and yellow butter mints like they have at weddings as a substitute. Turned out mighty fine. I like mine with a cup of hot tea on the side.
I seriously don't understand how you keep from being the size of a whale when you bake/make/eat all these goodies! I couldn't walk past the counter without gaining 5 lbs. Dang!

You have caused me to go on a real guilt trip! Not only have I neglected my Kitchen Aid, but even my old egg beater from the 70's when I was a bride, among other things, has been sadly neglected of late. I may not sleep till I remedy that. Too bad there is no cream cheese in the fridge right now....
