I love zucchini bread. Zucchini in salads is good. Baked zucchini with onion, tomato, italian seasoning and a few bread crumbs is a great side dish. But have you ever heard of zucchini soup? I hadn't until I saw a recipe for zucchini-taragon soup over at Joy the Baker.
I made a batch the other day and found it to be quite to my liking. When you find yourself with a bunch of zucchini on your hands and you don't know what to do with it - make soup!
I am loving my garlic pot from Spoleto. I especially like that I can use my spoon rest for my spoons when I am cooking again since it's not serving as the garlic holder.
Zucchini for one (or two): Cook some linguini. Grate the Z. Saute finely chopped garlic for 30 seconds in olive oil, add Z and saute for a couple of minutes longer. Top linguini with Z. S/P to taste and sprinkle with grated or shredded Parmesan cheese (I prefer shredded). Sliced tomato on the side, chilled white wine in the glass...Enjoy!!!

Zucchini soup sounds delish! The tarragon would give it a lovely French garden flavor too!
And everyone knows even if you only plant ONE zucchini plant in your garden you will have too much zucchini! In my area (Sacramento) everyone I know with a garden grows tomatoes and zucchini so no one can ever give any of it away! LOL I will try this soup later this summer when we are overrun with zukes! Thanks!

I don't think there is a soup I don't like with the exception of Cioppino. Fish soup just doesn''t cut it with me. Sets my stomach in flop/flip mode. But anything else I adore. Give some crusty bread slathered with butter, a bowl of soup and I'm one happy munchkin.
