Last week Chris said we should make a St. Patrick's day cake. I told him that was a ridiculous idea. Then I went looking for sprinkles. So we could make one of course.
This is a plain white cake - from a box mix! I jazzed it up with some killer cream cheese frosting and then went to work with the food coloring and decorations.
We recommend having itty bitty shamrock candies, lime green jimmies, green crystal sugar, and white sprinkles on hand so everyone having cake can have just the right amount of crunchy sugary sweetness on their own individual piece.
For the record... we are not too old to be believing in Leprechauns at tall tales headquarters.
Ya know, after I read your previous brilliant "Bailey's" post I was wondering if I should really risk coffee at 10p.m. - Bailey's or not. Then before I sign off for the night, you've baked a cake! I'm adding cake mixes, whipping cream, and assorted sprinkles to my grocery list for tomorrow. Guess what I'm having for breakfast??? Can't WAIT for Easter :)

P.S. - I have made the Biscotti Biscuits recipe you posted a couple of times now, and they are my new favorite thing any time of day or night, but especially with coffee in the morning. Simple, plain, yummy (I don't even frost mine).

Oh yes, Leprechauns lurk about this Irish household! My maiden name is Dolan. For the first time in years I didn't make Corned Beef, but I did have a bite of Irish Stew at Costco...does that count? I've sworn off everything white in my diet, so cake will have to wait until next year. Yours looks delightful.
