This week I finally made it to the Ladybird Diner in downtown Lawrence. I have been peering in the windows everytime I walk by, and I have been liking what I see. Cute curtains, waitresses (girls & boys) in aprons, with smiling faces. The place gives off a good vibe.
Just between you and me though. This is what I have been wanting to try.
If you go, do not for one second think about splitting a piece of pie with the person you go with. Instead, I will recommend you do what Joan and I did.
Split your entree and get two pieces of pie. We selected the egg salad sandwich as the perfect diner lunch. It was egg salad like egg salad is meant to be. Big chunks of egg, mildly spiced but still flavorful, with bits of green onion and a hint of mustard to balance the mayo.
In the foreground is my pie selection. Ancho Cherry. It was tart, with firm cherries, and a crust that tasted like it was a cross between a flaky croissant and the best pie pastry you could ever hope to meet. It was crazy good. Joan went for the coconut cream. Long strands of sweet, chewy coconut, surrounded by a smooth, rich filling and topped with fresh whipped cream. Oh heavens. As we were leaving the place, I swear the clouds parted, and the angels sang their approval. I am not kidding.
I told you.

The tartness of the cherries and the sweetness of the coconut cream have my taste buds all adither!

Oh how I love diners! This one looks incredible. I'm surprised you didn't immediately start sketching the curtains! Love the clouds, very prophetic :)

I can't believe I have been able to muddle through these many years without your wisdom! How many times have I ordered an entree and the SPLIT DESSERT with a friend??? Thank you for bringing me out of the Dark Ages into the twenty-first century! I will never split DESSERT again!

Now that I am convinced I am gluten intolerant...nothing personal, just physical, pie and I don't mix. Wah! Have to tell you your last photo is spectacular. Great shot!
