You may or may not recall that while in Virginia we had a delightful appetizer of smoked gouda pimento cheese served atop crusty beer bread. I, however, have not forgotten for one single minute since we got back. I had been waiting for "Sunday at the Masters" to recreate this dining experience at home.
After my second plate, Chris said "you're going to spoil your dinner". To which I replied "mind your own beeswax!"
If you want to make this for your next formal or informal gathering, it's easy. Pimento cheese spread for a small group is 1 cup grated sharp white cheddar, 1 cup grated smoked gouda, 4 oz pimentos in one of those little glass jars, 1/4 tsp celery salt and 1/4 cup mayo. Mix it all up and let the flavors mingle for a few hours or overnight. Double it if you're having more than 4 or 5 people over. Here's the beer bread recipe.
This pairs well with a chilled fume blanc (2013 Dry Creek Vineyards highly recommended) and if you want to dress things up, put a sprig of fresh thyme on the serving plate and a few thin slices of lime.
Pimento spread... a staple of all Southern kitchens! I've never heard of it before with Gouda so will have to try this for sure. BTW... IMHO, there are some things worth spoiling your dinner for!

Looks yummy! I'll have to try your version with Gouda. I usually use a very sharp cheddar & cream cheese with the pimentos & finely chopped onion & hot sauce...Frank's is our favorite. Sometimes it takes a bit of cayenne, too...definitely a treat & always a hit at gatherings.

Spoil your dinner??? That spread on bread would be dinner in my house! HA.
I got some of my favorite olive tapenade at Trader Joes this week. I love that on crusty toasted Italian bread. It sends me over the moon. I also love pimento cheese spread so will be trying this out...gouda cheese is also a favorite. Yum.

I never had Pimento Cheese Spread until I married my Kansas husband and my Mother-in-law would serve it often. She didn't make it but bought it from a store deli in OP. I will have to try your recipe and savor some old memories.
