Thank you Carol for sharing - David Leibovitz knows Parisians so well ... I had a lot of fun reading it, very sensitive.
May i suggest : 1/ if carrots are organic, rince them with water added with some white vinegar and then drain and rub them in a tea towel to keep the sin heathly (the vitamins are more numerous just below)
2/ to prepare : perfect !
3/ to dress : when they are raw, they make juice and it is great ! i am not satisfied with lemon, vinegar and dijon - to keep the sweet flavour, i usually add sunflower oil, salt and parsley, but i must confess my favorite is to match up with ... Caesar salad sauce !
Please notice that when they are cooked (in rings in boiling water), just add fresh cream and grated nutmeg - Well, i am not going to add more but in France we use to say that eating carrots makes you lovable !
