Well canning tomatoes is a worthy aspiration, I guess. But I remember watching my mother and aunt can whole chickens back in the early forties. Dad and Uncle Jerry chopped off their heads (yes, they run around headless) and cleaned and degutted them. They were forced into very large jars and pressure canned. Obviously made a strong impression on me at about 4 yrs. Those were the war years when necessity drove many actions.


Hi Carol - Did you know you can simply wash your tomatoes and freeze them whole? When you pull them out of the freezer and they start to thaw the skin peels right off.
Great trick!
