Today I decided to start some holiday baking. Bourbon balls were first up.
There are lots of recipes out there. I picked a very simple one. And made a few changes based on what was in the pantry.
The recipes all called for crushed vanilla wafers. I substituted Lorna Doone’s. I also cut the recipe in half because I don’t know what I would do with 30 bourbon balls. Actually I do know what I would do, and it would not be good.
1/2 cup each of crushed shortbread cookies, finely chopped pecans, and confectioners sugar. Add 1 tablespoon unsweetened cocoa powder and mix together. Add 1/8 cup bourbon and 2 1/2 tsps white light corn syrup that has been mixed together. Mix together and refrigerate for 3 hours
Form into balls and roll in powdered sugar. Foolproof. Delicious. The quantities above yielded 10. The perfect amount for a family of 2 where one half of the family will be partaking.
Meanwhile, Chris was peeling carrots and potatoes and chopping celery and slicing onions. Preparing to put the pot roast in the crockpot.
Sunday pot roast and bourbon balls. We have turned into our parents. Maybe grandparents.
For over 50 years I have made the BB's from the crazy cookbook "Saucepans and the Single Girl." I NEVER considered substituting Lorna Doones for the Nilla wafers. Now I will have to try it. And I always make double amounts because they are a much requested (and so easy) gift. Thanks for the tip.
