At least 10 years ago, I made some ginger cookies with an orange/gingery cream frosting sandwiched between 2 spicy, crispy on the outside - soft on the inside cookies. It could be that I made them a few times. Then somehow I didn't get back to them. Until this week.
I don't think I'll wait so long in between batches next time.
My brother tells me that it was in fact HE that gave ME the recipe. But I am pretty sure he doesn't have the original recipe that was torn out of the February 2008 Oprah Magazine. And if he did he wouldn't admit it.
Ginger, molasses, cinnamon, and cloves are perfectly paired - none overpowering the other.
This is not a fussy cookie to make, mix, chill, roll, sugar, flatten, bake.
Cool, frost, sandwich.
Stack, photograph, sample.
Sigh. Moan. Freeze most of them.
Especially if you are a household with mainly just one sweet eater. In pandemic times, bringing treats to works just isn't a thing.
P.S. They are really excellent when eaten frozen. Kind of like brownies are. And key lime pie. and... and... and...
