I made a pumpkin pie this weekend. Because I could. Because last year I only made one all season and a certain balancing out was called for. Pumpkin pie is one of my very favorite desserts. Starting way back when I was a kid and I got in trouble for sticking my finger right in the middle of the pie because I just couldn't wait. What was I thinking? Oh yeah, that I needed a taste right at that exact moment and nothing was getting in the way. I have always known my mind when it comes to food.
It's nice being an adult and being able to decide to make a pumpkin pie on October 3rd just because you want to, and YOU are in charge of all things pumpkin.
If possible, I am getting better at making crust. Mostly because I feel less intimidated. Using the food processor helps. As does getting used to your recipe. Aunt Lois I do hope you are watching me, and smiling with approval, from your corner of the collective universal consciousness.
There was a time when my favorite pumpkin pie had a crunchy pecan topping on it. These days I just like a creamy texture that stands up on it's own, with plenty of good flavor, but not overwhelmed by any one spice. I have been using America's Test Kitchen recipe which calls for sweet potatoes and fresh ginger. See photo at the end of this post with the recipe.
The filling is cooked first, then pressed through a strainer, which is a little bit fussy but worth every ounce of effort expended.
This pie is thick and I like it equally well with or without whipped cream.
Just put it on a plate and let me have at it, so I don't have to stick my finger in it and risk getting in trouble. I erased from my mind any punishment I incurred for that infraction. It's possible there was none. That's the way I am choosing to remember it, that Angie understood my need and just let it go.
